"'The history of Demarle has been made by a long line of inventors who have each pursued their great curiosity to make their own contribution to gastronomy. Demarle has been continually evolving for more than forty years now, constantly pushing forward the limits of culinary progress. Rather than writing a book about the history of Demarle, I decided to pay tribute to those who have built its reputation by publishing a very beautiful book of original and innovative recipes. 90 chefs from around the world accepted my invitation and I would like to thank them for their wonderful personal involvement.
